Recently, I had contacted Porter's Diner to partner with the "Maximization of Food Utilization" initiative and they had stated that their business produces minimal to no food wastage at all. They kindly invited my family and I for a meal during which the owner of Porter's Diner, Paul, had explained to the methods and efforts placed towards minimizing food disposal. He stated that all foods are used in one way or another, and if one ingredient is about to expire, it is immediately cooked, revitalized and used in one way or another for a specific dish, allowing Porter's Diner to act as leader in food conservation within the city of Fredericton, while still providing customers with whole and complete meals.
